Tiger Nut Flour Crepes (Made With Coconut Milk)

Tiger Nut Flour Crepes  Serving size: 2 people (makes about 3 crepes)  -- Prep time: 15 mins -- Cook time: 2 mins ____________________________________________________________________________ Tiger nut flour gives these crepes a sweet and savory nutty taste along with a nice texture. The coconut milk makes them rich, moist, and flavorful. I prefer tiger nut flour crepes over regular crepes made with butter and flour because they are healthier and taste just as delicious.  2 + 1/2 TBSP tiger nut flour 1/8 tsp salt or to taste 2 eggs  1/2 cup coconut milk  1 TBSP olive oil (if using coconut oil, make sure eggs are room temperature)  Mix all ingredients together. Heat skillet over medium-high heat and lightly cover skillet in olive oil. Take about 1/4 cup of batter and pour onto hot skillet in a circular motion.
