Tiger nut flour gives these crepes a sweet and savory nutty taste along with a nice texture. The coconut milk makes them rich, moist, and flavorful. I prefer tiger nut flour crepes over regular crepes made with butter and flour because they are healthier and taste just as delicious.
2 + 1/2 TBSP tiger nut flour
1/8 tsp salt or to taste
2 eggs
1/2 cup coconut milk
1 TBSP olive oil (if using coconut oil, make sure eggs are room temperature)
Mix all ingredients together. Heat skillet over medium-high heat and lightly cover skillet in olive oil. Take about 1/4 cup of batter and pour onto hot skillet in a circular motion. Twirl pan to evenly distribute batter into a thin layer. Cook for approximately 90 seconds; edges should be a little brown. Flip and cook for about 30 seconds. Adjust heat and timing depending on how big or thick your crapes are. Overlap cooked crapes on plate.
